Not much to report, but here's a recipe!

Although we've had a busy weekend around here, there's really been nothing worth mentioning! And I've taken NO pictures...can you believe that?

Kendall spent the weekend with my mom, and I can tell you that she had the time of her life! They went school shopping, she went swimming with the neighbor kids, they went to the county fair, and visited with some family friends. She was S.P.O.I.L.E.D. rotten and exhausted when she got home! But Grandma said she was as good as gold, so I am a happy mama!

With Kendall gone, we spent some good quality time with Noah. After I got home from working on Saturday, we took him shopping, since our portable DVD player has been acting up. Lord knows we don't want to be without one on our trip to the beach! That could make for a VERY long drive! Then we took him to Chick-Fil-A for a kid's meal and we all shared a milkshake...YUM!! When we got home, the neighbors called and told us to come over, so we did, and then kids played...Noah was worn out by the time we got him home and ready for bed.

On Sunday, we got up, made a big breakfast and then decided to go on a bike ride before it got too hot. Yeah, right. It was already hot! But we persevered! Then we hung out around here, doing some work. Barry filled up the blow-up pool and we set it up on the deck since it's supposed to be hot all week...the kiddos should get some good use out of it! Shawn is off traveling again, so we invited Deetra and Shea over for dinner...BLT's with fresh tomatoes from my garden, creamy cucumbers (from my garden) and onions, and zucchini brownies (from guess where???) The brownies turned out so good, I am going to post the recipe, which I got out of Barry's hometown "church ladies'" cookbook, which I LOVE! Be forewarned, this recipe is more like a sheet cake than a brownie...but it is quite tasty, and a great way to use all that zucchini! MommyK, I'm thinkin' of you!! FYI, makes enough for a crowd!

Zucchini Brownies

4 eggs
1/2 c. oil
2 c. sugar
2 c. flour
2 tsp. soda
2 tsp. cinnamon
1 tsp. salt
4 tbsp cocoa
1 tsp vanilla
3 c. grated zucchini
1 c. nuts (optional)

Beat the first 3 ingredients for 2 minutes. Add dry ingredients. Stir in remaining 3 ingredients. Bake in a greased jelly roll pan at 350 for 25-30 mins. Cool. *** NOTE: Barry does not like nuts in his food, so I substituted a handful of Ghiradelli semi-sweet chocolate chips...it was DIVINE! I highly recommend it!***

Frosting

8. oz cream cheese, softened
3/4 c. butter, softened
3 c. powdered sugar
2 tbsp cocoa
1 tsp vanilla

Mix together and spread on cooled brownies.


While Deetra, the kids and I were enjoying our brownies, Barry headed off to meet my mom and pick up Kendall-Bug. When they got back, they each enjoyed a brownie and then it was time to get those kids into bed! I let them sleep in this morning, and we had a nice, laid-back day. I had a LOT of stuff to get done around here, so they played in the pool and watched some movies after we got back from running a few errands. Now I am in the process of making some Roasted Veggie Quesadillas for dinner, and then we are off to take Kendall to Aunt Jessie's house...another sleepover!!! Boy, is she having fun, or WHAT???? The only person I know who has a social schedule to rival Kendall's is Aunt Jessie herself!!!

mmmm, reminds me of my favorite zucchini bread . Will have to try this recipe too - I can never pass up anything w/ frosting :)

btw . . . care to share your veggie quesadilla recipe? I tried a new one a few motnhs back, but it was just average. I've got a lot of onions and bell peppers that need to be used this week, so it's either that, or a stir-fry, or kabobs.

Sounds yummy. Were they moist/tasty enough to eat without the frosting?
I can only imagine Kendall's social life in 8-10 years. Watch out world.

I hope this is like the recipe I once had when I lived in Pa. - it sounds just like it but I like your idea of the chocolate chips and I have an opened bag I want to use up!!! Thanks!

Oh My Gosh! That recipe sounds SO GOOD!!! Not super healthy though huh? I mean, the zucchini is great...and if I could get my kids to eat zucchini hidden in brownies....then that's a winner!!
I wish I sill had zucchini growing in my garden...but I think my plants have all fizzled out now. Too many moles/gophers around here!
